Our family LOVES, LOVES this soup. If you have non-paleo family members you can always cook some noodles separately & add in to the individual bowls. This is hands down the best chicken soup I’ve ever had, making the chicken stock is a MUST.

This recipe if very flexible. Easily doubled. Use any sausage you like. My favorite is 1 lb Isernos bulk Italian chicken sausage (found at Costco) and 1 lb sliced Italian pork sausage. Add coarsely chunked onion while browning meat if you like.

These look like mashed potatoes. You can serve them with food you would eat with mashed potatoes. But… These do NOT taste “just like mashed potatoes” as some people like to say, but they are really delicious.
